Pumpkin Mochi
 

1 box plus 1/4 cup mochiko (mochi rice flour)
2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon cinnamon
4 eggs
2 cups sugar
1 (29 ounce) can pumpkin
1 (14 ounce) can condensed milk
1 cup (2 sticks) butter
2 teaspoons vanilla extract.

Preheat oven to 350 degrees. Sift together mochiko, baking powder, pumpkin pie spice and cinnamon.

Mix remaining ingredients together in a bowl. Add dry ingredients and mix thoroughly. Pour mixture into a lightly greased 9x13-inch pan. Bake for 1 hour. Cool completely and cut with a plastic knife.
