Namasu
is a vinegar-dressed vegetable and seafood dish served to complement
entrees. Cucumber is the most popular vegetable for namasu; you can
also use ogo (a type of seaweed), lotus root, bean sprouts, lettuce
or celery; vegetables must be thinly and evenly sliced for the right
texture. Combine vegetables with clam, abalone, dried shrimp, fresh-cooked
shrimp, raw fish or crab and this basic, fat-less vinegar dressing. |

Basic Namasu Dressing
1 cup sugar
1 cup vinegar
1 tablespoon lemon rind
Juice of 1 lemon
1/2 teaspoon salt
1 tablespoon mirin
1 tablespoon dried shrimp, rinsed and minced
Combine ingredients,
cover and shake well. Store in refrigerator.
