Yokan is a sweet confection made with azuki (sweet red bean) and kanten. 2 sticks white kanten Tear kanten into 1-inch pieces and soak in water for 30 minutes. Cook over medium heat until kanten dissolves. Add sugar and salt. Stir until both dissolve. Add koshian and continue cooking over medium heat, stirring constantly, until mixture comes to a boil. Pour into 8x8-inch pan; cool. Cut into desired shapes to serve. |
